Dough Fermentation Temperature Monitoring with Wireless Temperature Data Logger
In the food manufacturing industry, dough fermentation is critical for the production of baked goods such as bread and steamed buns. Under proper temperatures, yeast breaks down sugars to produce carbon dioxide and alcohol, causing the dough to rise and become soft and fluffy. The steady dough temperature directly affects dough fermentation and shapes food taste and production yield. Even slight temperature deviations create uneven rise, sour dough or wasted raw materials. Bakeries and food processing plants should ensure reliable dough temperature monitoring for fermentation.

Freshliance Coeus-WiFi/4G wireless temperature data logger fits dough fermentation temperature monitoring perfectly.
Reliable core temperature monitoring of dough
Coeus-WiFi/4G data logger is equipped with one built-in sensor and optionally up to two external probes ranging from -30℃~+70℃, perfectly suiting dough fermentation temperature monitoring of both single-door and dual-door fermentation chambers, etc. The external probes can be inserted deep inside dough tubs and proofing trays to capture accurate core temperature, instead of inaccurate ambient air data. The soft cable is 2m long by default, with flexible ultra thin cable is optional to easily pass through proofer gaps without damaging sealing; meanwhile, other cable lengths are customizable from 5m, 10m, 15m to 20m to meet different deployment requirements.

Remote online data monitoring with mobile phones and computer
Flexibly equipped with WiFi or 4G connectivity, this wireless temperature data logger fits every environment. The WiFi model is ideal for environments with strong, stable WiFi coverage; and the 4G model is tailored for the environments where WiFi is unavailable or unreliable, delivering higher mobility and flexibility.
Data is synced to Freshliance cloud in real time. Operators view live temperature curves and full data lists via the dedicated mobile APP and the cloud platforms, with automatically calculated statistics of max, min, average readings and MKT values. PDF and CSV reports can be exported instantly to meet audit demands.

FDA CFR21 compliance for data integrity and audit trail
This wireless temperature monitoring system also supports the FDA CFR21 module for electronic records, electronic signatures and secure access control. This fully supports GMP and HACCP compliance for critical control point monitoring in food production, ensuring that every fermentation batch maintains complete, traceable temperature records.
Powered by the Type-C main power supply and a 2600mAh rechargeable lithium backup battery, the logger ensures reliable temperature monitoring throughout the dough fermentation process, from short cycles of 1–2 hours to extended periods of up to 12 hours. Multi-channel alarms stop fermentation failures early: the flashing red light and the buzzer alarm trigger on the unit itself, while SMS, email and APP push notifications alert off-site staff the second dough drifts outside preset temperature limits. The wide backlit LCD display also shows live readings and max/min readings for quick on-site check.
Coeus-WiFi/4G wireless temperature data logger reduces fermentation risks and ensures consistent batch quality. Open API is also optional for data integration with existing food production management systems, such as MES and ERP platforms, for streamlined data management and process optimization.
